Ingredients:

8 eggs

200 g mushrooms

50 g butter

Olive oil spray with black truffle pieces

Sea salt with truffle

40 g black truffle carpaccio

Pepper

Preparation:

  1. Sauté onion and garlic in olive oil with white truffle flavor
  2. Add mushrooms and season them with sea salt with black truffle
  3. Wait for the mushrooms to release their juice. Stir
  4. Add butter and eggs to the mushrooms, stir. Cover with a lid and keep on low heat for ~ 8 min
  5. Remove from heat, add olive oil with white truffle flavor
  6. Optional: sprinkle with parsley greens
