Stuffed Peppers

Ingredients:

3 Kapia peppers

100 g feta or other soft salted cheese

2–3 tbsp Greek yogurt

Dried herbs to taste (e.g., oregano)

A handful of crushed nuts (hazelnuts, walnuts, or pine nuts)

Fresh basil leaves

Truffle oil

Preparation:

  1. Preheat oven to 185°C
  2. Place peppers on a baking sheet and bake for about 20 minutes — until soft and golden skin appears
  3. Let cool, carefully remove the skin, and remove seeds. For the filling, mix cheese and yogurt until creamy. Add dried herbs
  4. Stuff the peppers with the resulting mixture
  5. Before serving — sprinkle with nuts, basil leaves, and generously drizzle with truffle oil
